2Why does this work? Well, to answer that question, let us examine the difference between all-purpose flour, and cake flour. Actually it is all in the amount of protein each flour contains. Cake flour is low in protein, being about 8%. All-purpose flour can go from 9, up to 11% protein. Understand that protein converts to gluten during the kneading and baking process. The lower the protein the better it is for cakes, because it delivers a nice tender texture, and rises well, during the baking process.

3Why Cornstarch? Cornstarch slows down the formation of gluten and, at the same time adds that sponginess we all associate with a good moist cake.
