I'm part of a once-a-month Health Dinner club. It was my turn, but with Thanksgiving, I was overwhelmed. I asked a friend at work for suggestions, and this was the recipe she gave me. The trick is to let it cook until it is good and solid, so flipping is a breeze. I just put out some fresh vegetables, an avocado aoili, and some pan-seared chicken. It was a hit!

Ingredients For crepes

  • 2
    egg whites
  • 1 Tbsp
    oil
  • 1 c
    skim milk
  • 1/2 c
    flour
  • 1/4 tsp
    salt

How To Make crepes

  • 1
    Mix all ingredients together and well. Pour 1/10 into pan sprayed with cooking spray, one at a time. Cook over medium heat UNTIL ABLE TO FLIP EASILY, then flip and cook for about 20 seconds more. Serve with desired filling.
