As an accompaniment to dinner or dessert ~~ delicicous either way. Use your favorite muffin mix to make a cranberry surprise. Place a tablespoon or so of muffin batter into the muffin tin, drop two or three small cubes of cut-up jellied cranberry sauce in, then top off the muffin batter as usual, covering the suprise. Ingredients For cranberry fritters ~ flavors of cape cod

  • 1 can
    (17 oz.) cranberry sauce
  • 3/4 c
    all purpose flour, sifted
  • 1 tsp
    lemon juice
  • 1/3 c
    milk or water
  • 1/4 tsp
    salt
  • 2
    eggs, separated
  • 1 tsp
    shortening, melted
  • extra flour

    Cut the cranberry sauce into half-inch slices, then divide into halves crosswise, set aside. Beat egg whites until stiff and set aside. Sift flour and salt together. Make a hollow in the center and pour in well-beaten egg yolks, lemon juice, melted shorenting and part of the milk or water. Beat until perfectly smooth. Add remaining milk or water and finally fold in stiffly beaten egg whites. Roll cranberry slices in the extra flour then dip in batter. Drop gently into deep hot fat (390 degrees) Cook until golden brown. Drain on paper towel or bvrown paper and dust with granulated sugar. Submitted by Mae Foster
