I made the Rosemary Cran-Apple Chicken for dinner tonight, and my daughter wanted some stuffing. So of course this recipe is gluten free. If you don't need GF, you can use regular bread (preferably day old French bread) to make this recipe. My husband, all the kids, & I enjoyed this delicious version. If you like walnuts, you can add chopped walnuts to this recipe as well. (My other daughter is allergic so for that reason, I did not add to recipe tonight.) Feel free to add your own seasonings to your taste. It's a quick & easy recipe the whole family can enjoy!

Ingredients For cran-apple stuffing (gf)

1/2 cbutter (or coconut butter)

1 stalkcelery, chopped

1 smonion, chopped

1 mdgranny smith apple, cored & chopped

6 ozcranberries
-
1 tspthyme, dried
-
1 tspsea salt
-
1 1/2 cchicken stock
-
1 cwalnuts, chopped (optional)

5-6 cgf bread, toasted & cut in approximately 1" pieces
How To Make cran-apple stuffing (gf)

1Prepare your bread. I lay the bread slices flat on oven rack and bake for about 10-15 minutes. Remove from oven, cool. Cut into 1 inch pieces, & set aside.

2In a large skillet, melt butter. Add chopped onions, celery, apples, & cranberries. Cook on medium heat until onions are transparent. About 3-5 minutes

3Sprinkle thyme & salt over mixture. Spoon mixture over bread & mix in well.

4Add chicken stock 1/2 cup at a time, mixing thoroughly until stuffing is moist, but not too wet. Fold in walnuts.

5Cover and bake @ 350 degrees F for 30 minutes. Remove cover and bake an additional 5-10 minutes.

6Serve with Rosemary Cran-Apple Chicken.
