I was inpired to create my own take of the Colombian Buñuelos that our close family friend used to prepare all the time when I was a child. I hope you all enjoy.

Ingredients For chèvre beignet

1/3 ctapioca starch
-
1/4 ccornstarch
-
1 1/2 Tbspsugar

1 Tbspbaking powder
-
1/2 tspsalt
-
1 cchèvre cheese
-
1egg
-
abt 1 tspmilk
-
oil
How To Make chèvre beignet

1Whisk together all dry ingredients in bowl. Mix in the chèvre cheese.

2Create a well in the center, mix egg in by hand until a doughy consistency. Only add milk if needed to get right consistency.

3Form balls about 1 inch in diameter and drop into hot oil. Cook about 4 minutes until golden brown. Serve and Enjoy! =) **Optional: Lightly dust with powdered sugar.
