My husband loves corn bread and I came across this recipe in one of my grandmother's recipe books, it is so yummy and very easy to make. It was a huge hit with my family! Hope you enjoy it.

Ingredients For cheesy jalapeno corn spoon bread

  • 1/2 md
    onion, chopped
  • 2 Tbsp
    butter
  • 1
    egg
  • 1 c
    sour cream
  • 1/2 can
    whole kernel corn, drained
  • 1/2 can
    cream-style corn
  • pinch of salt
  • 1/8 tsp
    pepper
  • 1/2 pkg
    corn bread/muffin mix
  • 1 md
    jalapeno pepper, minced
  • 1 c
    shredded cheddar cheese, divided

How To Make cheesy jalapeno corn spoon bread

    In a skillet saute onion in butter until tender; set aside.

    In a large bowl, beat the egg; add sour cream, both the corns, salt and pepper. Stir in the corn bread muffin mix just until blended. Fold in onions and jalapeno and half of the cheese.

    Transfer to a greased shallow baking dish. Sprinkle with the remaining cheese. Bake uncovered at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool slightly before serving.
