Ingredients For canadian malt bread

375g/13ozsultanas

50g/2ozbutter
-
375g/13ozself raising flour
-
1/2 tspbicarbonate of soda
-
250g/9ozsugar
-
2eggs,beaten
-
325ml/12ozhot water
How To Make canadian malt bread

1put sultanas, butter and water in a pan, bring to the boil and simmer for 4 minutes. allow to cool a little.

2mix together flour, bicarbonate of soda and sugar.

3mix warm fruit mixture into flour mix.

4mix in the beaten eggs.

5grease two 450g/1lb loaf tins and put in the mixture, level the tops.

6Bake in a moderately hot oven, gas 5,375f, 390c,for 1 hour.
