You make this bread 1 day ahead. For extra flavor,stir in 1/2 teaspoon grated orange peel.

Ingredients For blueberry orange bread

  • 2 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 tsp
    baking soda
  • 2 Tbsp
    butter..cut-up
  • 1/4 c
    boiling water
  • 1 lg
    egg..slightly beaten
  • 1 c
    sugar
  • 1/2 c
    orange juice
  • 1 c
    fresh blueberries

How To Make blueberry orange bread

    Preheat oven,350. Grease the bottom and 1/2"up the sides of a 8"x4"x2"loaf pan. Set aside.

    In a large bowl,stir together flour,baking powder,salt,baking soda;make a well in the center and set aside. Stir together butter and boiling water until butter is melted. In a medium bowl,combine egg,sugar,orange juice;stir in butter mixture. Add to dry ingredients,stirring just until moistened. Fold in Blueberries. Spoon the batter into the prepared pan. Bake 350 about 60 minutes,or until a toothpick comes clean when inserted near the center. Cool 10 minutes. Remove from pan and cool completely on rack. Wrap in aluminum foil and store overnight.
