This cornbread is made in a electric skillet. I believe you could still cook in your oven at a low temperature .

Ingredients For blueberry corn bread

  • 1 c
    blueberries
  • 1 c
    corn meal
  • 1 1/2 c
    sifted flour
  • 1/4 c
    sugar
  • 2 tsp
    baking powder
  • 1 1/2 c
    milk
  • 2
    eggs
  • 1/4 c
    shortening

How To Make blueberry corn bread

  • 1
    Wash and drain blueberries. Put corn meal in a bowl and sift in dry ingredients and a dash of salt. Add remaining ingredients and mix well. Fold in blueberries.

    Grease electric skillet and preheat to 250 degrees. Pour batter in, cover and cook with vent open for 25 minutes.
