Ingredients For best bruschetta

1yellow bell pepper, roasted, peeled and seeded and minced
-
4roma tomatoes, chopped into small dice

1 clovegarlic, minced

1/2 cbasil, chopped fine

1loaf italian or french bread, cut into thin slices

1/2 lbmozzarella cheese, grated
-
1/4 casiago cheese or parmesan cheese
-
1/2 Tbspextra virgin olive oil

salt to taste

freshly ground black pepper
How To Make best bruschetta
-
1Toss roasted yellow pepper, tomatoes, garlic and basil together with salt and pepper to taste.

2Top each slice of bread with mozzarella cheese and place in the oven just until cheese starts to melt and bread crisps up a bit.

3Top each bruschetta slice with a teaspoon of pepper/tomato mixture. Sprinkle with Asiago or parmesan cheese.

4Drizzle bruschetta with olive oil, place bread slices on a platter and serve.
