Ingredients For apple pancake
- APPLE TOPPING

2 Tbspbutter

1 lbapples, peeled, cored and sliced 1/2" thick

1 Tbsplemon juice

1/4 cbrown sugar
- BUTTERMILK PANCAKE BATTER

1 1/2 cclour
-
2 Tbspbrown sugar

1 tspbaking powder
-
1 dashsalt
-
1/2 tspground cinnamon
-
1/4 tspbaking soda
-
1 cbuttermilk
-
1egg
-
1/4 cmilk
How To Make apple pancake

1APPLE TOPPING: Heat butter in large cast iron skillet over medium heat. Add apples, lemon juice and brown sugar. Cook stirring until crisp tender. About 5 minutes. Set aside off burner.

2PANCAKE: Combine milk, egg and buttermilk in medium bowl. Whisk in dry ingredients. Stir until well blended.

3Spoon pancake mixture on top of apples in skillet spreading evenly to side of skillet.

4Bake at 375 degrees for 20 - 25 minutes or until set and golden on top and wooden toothpick inserted in center come out clean

5Let set 5 minutes. Loosen sides with spatula.

6Invert on serving platter. Garnish with whipped cream if desired.

7HINT: Sometimes I substitute a can of apple pie filling for the apples mixture. If doing this, pour pie filling into buttered skillet and proceed with pancake directions.
