Ingredients For zucchini muffins

1 1/2 call purpose flour

1 1/2 tspbaking powder

1/4 tspbaking soda

1/4 tspsalt

2 tspground cinnamon

1 lgegg, beaten

1 cgrated zucchini

1 1/4 csugar
-
2/3 cmilk

1/3 cvegetable oil

1 tspvanilla extract

3/4 cchopped pecans
How To Make zucchini muffins

1Combine dry ingredients in a mixing bowl; make a well in center.

2Combine egg, zucchini, sugar, oil and vanilla, and 2/3 cup milk, mixing well; add to dry ingredients, stirring just until moistened. Stir in pecans.

3Spoon into greased and floured muffin pans, filling 2/3 full. Bake at 350 degrees for 22 minutes.
