    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    salt
  • 2 tsp
    ground cinnamon
  • 1 lg
    egg, beaten
  • 1 c
    grated zucchini
  • 1 1/4 c
    sugar
  • 2/3 c
    milk
  • 1/3 c
    vegetable oil
  • 1 tsp
    vanilla extract
  • 3/4 c
    chopped pecans

How To Make zucchini muffins

    Combine dry ingredients in a mixing bowl; make a well in center.

    Combine egg, zucchini, sugar, oil and vanilla, and 2/3 cup milk, mixing well; add to dry ingredients, stirring just until moistened. Stir in pecans.

    Spoon into greased and floured muffin pans, filling 2/3 full. Bake at 350 degrees for 22 minutes.
