Ingredients For zesty corn muffins

1 cwhole wheat flour

2/3 call purpose flour

1/3 csugar

4 tspbaking powder

1/2 tspsalt

1/2 tspchilli powder

1 1/2 call-bran orginal cereal ( like kellogg's)

1 cskim milk
-
3egg whites
-
3 Tbspvegetable oil
-
1 can( 8.75oz) whole kernel corn, drained

1/4 cdrained, chopped pimentos
-
2 Tbspchopped onions
-
1 to 2 Tbspchopped jalapeno peppers

1/2 cshredded mozzarella cheese
How To Make zesty corn muffins

1Stir together flours, sugar, baking powder,salt and chilli powder. Set aside.

2In a large mixing bowl,combine all-bran cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well.Stir in corn, pimentos, onions, peppers and cheese. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2- inch muffin-pan cups coated with cooking spray.

3Bake at 400 about 20 minutes or until lightly browned. Serve warm. Makes 12 muffins
