Ingredients For yummy baked egg muffins

  • 6 slice
    maple-flavored bacon
  • 1-1/2 Tbsp
    melted butter
  • 1-1/2 Tbsp
    real maple syrup
  • 6 slice
    bread, crusts removed
  • 6 lg
    eggs
  • salt and pepper to taste
  • 6 Tbsp
    lite cream
  • 6 Tbsp
    reduced-fat, shredded cheddar cheese

How To Make yummy baked egg muffins

    Heat oven to 375. Spray 6 lg muffin cups w/ cooking spray. In lg skillet over med-high heat, cook bacon until crisp. Drain on paper towels. Crumble, set aside.

    In small bowl, combine melted butter and syrup. Flatten each slice of bread w/ a rolling pin. Brush bread slices w/ butter mix. Line each muffin cup w/ 1 slice bread.

    Bake bread until slightly crisp, about 3 mins. Sprinkle bacon into bottom of each toast cup. Crack 1 egg into each cup. Season w/ salt and pepper. Top each cup w/ 1 tbsp lite cream and 1 tbsp cheese. Bake until whites of egg are set, about 10-15 mins.
