2 cwhole wheat pastry flour

1 tspbaking soda

1/4 tspsalt

1/4 tspcinnamon

1/3 cbrown sugar, firmly packed

1/3 clow fat milk

1 1/2 tspvanilla extract

1/4 cbutter, unsalted, melted and cooled

1 1/3 cfreshly grated zucchini

1/3 cmashed bananas

1/2 cchocolate chips, mini
How To Make whole wheat zucchini banana chocolate chip muffins

1preheat oven to 325. in a large bowl, whisk together flour, baking soda, salt and cinnamon. set aside. line a muffin tin with liners.

2in a large bowl, whisk egg and brown sugar together until smooth and no lumps remain.

3add in vanilla extract, butter and milk, whisking again until smooth, then stir in zucchini and mashed bananas.

4gradually add in dry ingredients, mixing until just combined.

5fold in chocolate chips. fill each muffin liner 2/3 of the way full with batter (i use a 1/4 cup measure to get the muffins to be equal size).

6bake for 15-17 minutes, or until no longer wet and becomes slightly golden. remove and cool until comfortable to the touch. top with brow sugar glaze if desired.
