vera’s muffins

This recipe came from my grandma shortly before she passed away.. she had me make them for her on one of the last times I visited. They are very good, and I treasure the memory!! Her doctor wanted her to eat more fiber and a family member shared this recipe with her. I make them often as they are a nice snack to take in my lunch bag!! Not too sweet and very tasty! .. I think a bit of cinnamon in these would be good but I keep forgetting to try it ???????

Ingredients For vera’s muffins

1 cmulti-grain hot cereal, uncooked (i use our store brand)

1 call purpose flour

1 Tbspbaking powder

1/2 tspbaking soda
-
1/2 tspsalt
-
1/2 csugar
-
1 cshredded carrots
-
1 cpeeled and chopped apples
-
1/2 cmilk (can use buttermilk)

2 lgeggs beaten
-
1/4 coil
-
1 Tbspvanilla extract
How To Make vera’s muffins

1Preheat oven to 400 degrees.

2Grease muffin tin or use cupcake liners.

3Mix all dry ingredients and then stir in the wet. Batter will be thick.

4Fill muffins half way. Bake 20-25 minutes
