Of all the quick breads that I make this is one of my favorites. I love the bread and icing combination and could eat this every day.

Ingredients For ultra yummy pumpkin bread

  • 1 can
    (15 oz) solid pumpkin
  • 4
    eggs
  • 1 c
    vegetable oil
  • 2/3 c
    water
  • 3 c
    white sugar
  • 3 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1 1/2 tsp
    salt
  • 1 tsp
    ground cinnamon
  • 1 tsp
    ground nutmeg
  • 1/2 tsp
    ground cloves
  • 1/4 tsp
    ground ginger
  • FROSTING
  • 4 oz
    package cream cheese softened
  • 1/4 c
    butter softened
  • 1/2 tsp
    vanilla extract
  • 2 1/2 c
    powdered sugar

How To Make ultra yummy pumpkin bread

    Preheat oven to 350 degrees. Grease 7x3 inch loaf pans (2 needed).

    In large bowl mix pumpkin, eggs, oil, water, and sugar until well blended. in a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

    Bake for about 60 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

    While loaves baking in large mixing bowl, beat cream cheese, butter and vanilla until well blended. Slowly while mixing add powdered sugar.

    Once bread completely cooled pour frosting over top of each loaf. (In my kitchen, we skip this step and add a little frosting to a slice of bread.)
