You won't find this recipe in any book anywhere, It is my own design, I wanted to make something like a muffin with what I had on hand... Here it is, so good and moist.. Don't know it is almost cake like.. so muffin or cupcake.. what ever you want to call it ..it is GOOD!!

Ingredients For tammy's carrot muffins

1 cancarrots,drained

2eggs
-
1/2 cwhite sugar

1/4 cbrown sugar

1/4 ccanola oil

1/4 csour cream

1/2 tspcinnamon

1/4 tspnutmeg
-
1 tspvanilla

1/2 tsporange extract (just for fun) adds a good flavor

2 chealthy heart bisquick
How To Make tammy's carrot muffins

1First I mashed the carrots, then added the sugars, eggs, oil and sour cream. Mixing well. Then I added the spices and flavorings, mixing well. Lastly I added the bisquick stirring well.

2I used a 12 cup muffin pan, filled 3/4 full, bake at 325* for about 20 minutes. top should bounce back when pressed in the middle. They are light colored.

3I don't use papers, I just spray pan with pam. So I'm not sure how it would work with papers, but I don't see why it wouldn't.. also I just served these warm with butter and honey. But since they are so cake like, I think you could frost them with a cream cheese frosting if you'd like. ENJOY!!
