strawberry muffins

Can you tell I like strawberries? Or muffins? These are just fantastic, and you will love them. I would love to say that I bake and freeze them for later eating, but wouldn't want to fib!

Ingredients For strawberry muffins

  • 10 oz
    frozen sliced strawberries, thawed and undrained
  • 2 c
    flour
  • 2/3 c
    sugar
  • 1 1/2 Tbsp
    baking powder
  • 3/4 tsp
    salt
  • 2/3 c
    milk
  • 2
    eggs
  • 1/3 c
    oil
  • strawberry butter (see directions)

How To Make strawberry muffins

    Reserve 2 T strawberries for butter. Stir flour , sugar, baking powder and salt into bowl. Make a well in center. Stir strawberries, milk, egg and oil until blended, add to dry ingredients just until moistened. Spoon into greased muffing pans, 2/3 full. Bake at 375 degrees 20 min, remove immediately.

    For butter: stir strawberries with 1/2 c softened butter until well blended.
