I found this recipe 35 years ago when I subscribed to a monthly recipe packet club which no longer exists. I love these muffins, they're different and delicious!

Ingredients For strawberry ambrosia muffins

  • 2
    eggs
  • 1/2 c
    vegetable oil
  • 3/4 c
    sugar
  • 1 pkg
    (10 oz) frozen sliced strawberries
  • 1-1/2 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 2/3 c
    flaked coconut

How To Make strawberry ambrosia muffins

  • 1
    Beat eggs until light. Blend in oil, sugar, and strawberries.

    Stir together flour, baking soda, and salt in large bowl.
  • 3
    Stir in strawberry mixture and coconut just until moistened.
  • 4
    Spoon into muffin cups with paper liners, about 3/4 full.

    Bale at 400F for 20-25 minutes. Remove from pans. Serve warm.
