Oh so scrumptious muffins with the taste of fall, and they're even healthy for you. Serve w/hot apple cider to really bring out the apple taste in the muffins.

Ingredients For scrumptious apple pie muffins

3 cwhite whole wheat flour

1-1/2 tspcinnamon

1/2 tspground nutmeg
-
1 cfat free milk
-
1/2 cpacked light brown sugar

1/4 cplus 2 tbsp fat free or light apple flavored yogurt, or plain yogurt if you can't find apple.

1/4 cunsweetened applesauce
-
1/4 csugar
-
2 lgeggs
-
3-1/2 tspbaking powder
-
1/8 tspbaking soda
-
1/4 tspsalt
-
2 cheaping, apple, peeled, cored and chopped

1/4 cbrown sugar
-
2 Tbspall purpose flour
-
2 Tbspold fashioned oats

1/2 tspcinnamon

2 Tbspunsalted butter
How To Make scrumptious apple pie muffins

1Heat oven to 425. Spray 12 lg muffin cups w/ cooking spray. In small bowl combine, 1/4 cup brown sugar, 2 tbsp flour, oats, 1/2 tsp cinnamon. Cut in unsalted butter until crumbly, set aside.

2In lg bowl, combine 3 cups flour, remaining cinnamon, and nutmeg. In another bowl, beat milk, sugar, yogurt, applesauce, eggs, baking powder, salt and baking soda. Beat on low until combined.

3Add to flour mix, gently mix just until combined. Fold in apples. Spoon batter into muffin cups, fill to the top. Sprinkle w/ reserved topping. Bake 5 mins. Reduce heat to 375. Bake 15-18 mins, or until a toothpick inserted into center of 1 muffin comes out clean.
