I like serving corn muffins with many different kinds of casseroles and soups. They are also good for a snack too.

Ingredients For roda's corn muffins

  • 1 c
    flour
  • 1 c
    corn meal
  • 3/4 c
    sugar
  • 4 tsp
    baking powder
  • 2 or 3
    shakes of salt
  • 2
    eggs
  • 1 c
    milk

How To Make roda's corn muffins

    Heat oven to 425. Grease 12 cup muffin pan or a 9x9x2 pan for cornbread.

    Mix all ingredients together until just blended.

    Fill muffin cups 2/3 full.

    Bake 12 to 15 minutes.
