Saw this in a cookbook and had to try it out. It was absolutely delicious. It's not exactly carb friendly... but they taste great with butter and preserves :-)

Ingredients For rice muffins

  • preheat oven to 400 * f
  • 1 c
    cooked rice
  • 1 1/2 c
    all purpose flour
  • 1 Tbsp
    sugar
  • 1/2 tsp
    salt
  • 3 tsp
    baking powder
  • 1 c
    milk
  • 2
    eggs, beaten
  • 5 Tbsp
    butter, melted

How To Make rice muffins

  • 1
    Sift flour, salt, sugar, and baking powder together then set aside
  • 2
    Mix milk, eggs, butter, and rice together in a large bowl - then carefully add the dry ingredients. Mix just till it's all moistened
  • 3
    Pour batter into greased muffin tins and bake for 25 minutes
