Saw this in a cookbook and had to try it out. It was absolutely delicious. It's not exactly carb friendly... but they taste great with butter and preserves :-)

Ingredients For rice muffins

preheat oven to 400 * f

1 ccooked rice

1 1/2 call purpose flour

1 Tbspsugar

1/2 tspsalt

3 tspbaking powder

1 cmilk
-
2eggs, beaten
-
5 Tbspbutter, melted
How To Make rice muffins

1Sift flour, salt, sugar, and baking powder together then set aside

2Mix milk, eggs, butter, and rice together in a large bowl - then carefully add the dry ingredients. Mix just till it's all moistened

3Pour batter into greased muffin tins and bake for 25 minutes
