This is a nice little warm muffin recipe for using up left over rice that I found in Mom's notebook. Easy and straight forward. Enjoy!

Ingredients For rice muffins
- SIFT TOGETHER:

1 cflour

1 Tbspsugar
-
1/2 tspsalt

1 1/2 tspbaking powder
- DILUTE AND COMBINE:
-
2 cboiled rice
-
1 cmilk
-
1 Tbspbutter
-
3egg yolks
- FOLD IN:
-
3egg whites, beaten stiff
How To Make rice muffins

1Sift the dry ingredients (flour, sugar, salt, baking powder) and make a well

2Dilute the rice with milk, butter, and egg yolks, stirring to incorporate, then pour into the well in the dry ingredients and combine all

3Fold in the three egg whites beaten stiff

4Bake in muffin tins at 375 F until done (probably about 10-12 minutes or so, I would guess -- you will have to test the first batch and record the time for future reference)
