  • 2 c
    sugar
  • 3
    eggs
  • 1/2 c
    vegetable oil
  • 1 1/3 c
    pure pumpkin
  • 1 c
    cake flour
  • 1 c
    all purpose flour
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 c
    raisins
  • STREUSEL
  • 4 Tbsp
    flour
  • 4 Tbsp
    sugar
  • 4 Tbsp
    brown sugar
  • 1 tsp
    cinnamon
  • 2 Tbsp
    cold butter

How To Make pumpkin muffins

    Preheat oven to 350 degrees. Line muffin tins with papers.

    Beat together sugar and eggs.
  • 3
    Add oil and pumpkin, mixing until smooth.

    Add flours, baking soda, and spices, stirring well. Then fold in raisins.

    Spoon into muffin pan about 3/4 full.

    Streusel: Combine dry ingredients. Add butter and mash until it resembles coarse crumbs.

    Sprinkle streusel on top of each muffin.

    Bake 22-25 minutes until golden. Cool in pan 30 minutes.
