1 ccanned pumpkin puree

1/3 cvegetable oil

2 tspbaking powder

1 1/4 csugar

1 1/4 crice flour

1 tspcinnamon

1/4 tspnutmeg

1/4 tspginger

1/2 tspbaking soda

1/2 tspsalt
How To Make pumpkin muffins

1Preheat oven to 350 degrees.

2Mix baking powder with 3 tablespoons + 1 teaspoon water

3In large bowl, combine pumpkin, oil, baking powder/water, and sugar. Mix until well blended.

4Add the flour, spices, 1 teaspoon baking powder, baking soda and salt. Whisk to combine.

5Fill paper lined muffin tin about 2/3 full.

6Bake for 25-30 minutes. Cool in pan 5 minutes.
