These are crazy good. I've literally had 2 separate marriage proposals (as a joke, I think...) after friends have tried these. I'm not kidding, it is the best pumpkin muffin you'll ever have and they taste even better the second day.

Combining apples and pumpkin with all the fall spices in one muffin is a marriage made in heaven. The muffins are tender with bits of apple in every bite. The sugary topping bakes perfectly and goes with all the yummy flavors. These are equally good warm or at room temperature. Better than anything you'll find at the coffee shop, these are honestly some of the best muffins we've tried.

Ingredients For pumpkin apple muffins

  • FOR MUFFINS
  • 2 1/2 c
    all-purpose flour
  • 3/4 c
    sugar
  • 1/2 c
    light brown sugar
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/8 tsp
    cloves
  • 2 lg
    eggs
  • 1 1/4 c
    canned pumpkin
  • 1/2 c
    vegetable or canola oil
  • 1 tsp
    vanilla
  • 2 1/2 c
    Granny Smith apples, peeled and diced
  • FOR TOPPING
  • 1/4 c
    light brown sugar, packed
  • 2 1/2 Tbsp
    all-purpose flour
  • 1 tsp
    cinnamon
  • 2 Tbsp
    unsalted butter, cold and diced

How To Make pumpkin apple muffins

  • Spraying muffin tins with non-stick spray.

    Preheat the oven to 350 F and spray muffin pan with non-stick cooking spray.
  • Dry ingredients in a bowl.

    In a medium bowl, combine all the dry ingredients including sugars.
  • Wet ingredients mixed in a separate bowl.

    In a larger bowl, whisk eggs, pumpkin, oil and vanilla extract.
  • Blending dry ingredients into wet ingredients.

    Slowly blend the dry ingredients into the wet, mixing until incorporated.
  • Apples folded into apples.

    Fold in apples.
  • Topping mixture in a bowl.

    To make the topping, combine ingredients and mix until butter is pea size.
  • Muffin tins filled with batter.

    Fill greased muffin tins about 7/8 full--almost to the top, and sprinkle with the topping if desired.
  • Muffins baking in the oven.

    Bake for about 20-24 minutes or until a toothpick inserted into the muffins comes out clean.
  • Muffins cooling.

    Let cool for a few minutes. Remove muffins from pan and enjoy warm or cold!
