Ingredients For pumpkin almond flour muffins

  • 1 1/2 c
    almond flour
  • 3/4 tsp
    baking soda
  • 2 1/2 tsp
    cinnamon
  • 1 tsp
    pumpkin pie spice
  • 4 lg
    eggs
  • 3/4 c
    canned pumpkin
  • 1/3 c
    maple syrup
  • 1 tsp
    vanilla
  • 1/2 c
    almonds, chopped
  • 2 Tbsp
    raw sugar

How To Make pumpkin almond flour muffins

    Preheat oven to 350 degrees. Line muffin pan with paper liners.

    In a large bowl, stir together the almond flour, baking soda, cinnamon and pumpkin pie spice.

    In another bowl whisk the eggs. Add pumpkin, maple syrup and vanilla.

    Add wet ingredients to dry ingredients. Mix together until combined. Fold in almonds.

    Divide batter among muffin cups.

    Sprinkle with raw sugar.

    Bake for 22-25 minutes.

    Cool in pan for 30 minutes.
