See my notes on my Pumpkin Apple Streusel Muffins. These pineapple nut muffins are a bit different - but we liked them in our house, so they made the cut too.

Ingredients For pineapple nut muffins

2 call purpose unbleached flour

1/4 cnonfat dry milk powder

1 Tbspbaking powder

1 tspsea salt

1/2 csugar
-
3 lgeggs, beaten

1/2 ccanola oil

1 cancrushed pineapple in its own juice 8 oz. can

1/2 cpecans, chopped
How To Make pineapple nut muffins

1Whisk together all the dry ingredients in a large bowl.

2Whisk together the eggs, canola oil and pineapple in a medium bowl.

3Add the liquid ingredients to the dry ingredients and stir together until just blended. Gently stir in the pecans.

4Fill muffin cups about 2/3 full and then bake 12-15 minutes at 400? F until golden and they pass the toothpick test.
