Ingredients For pear ginger muffins

  • 3/4 c
    brown sugar
  • 1/3 c
    canola oil
  • 1 lg
    egg
  • 1 c
    buttermilk
  • 2 1/2 c
    flour
  • 1 tsp
    baking soda
  • 1 tsp
    fresh ginger, shredded
  • 1/2 tsp
    cinnamon
  • 2 c
    pears, peeled and chopped
  • TOPPING
  • 1/3 c
    brown sugar
  • 1/2 tsp
    ginger, shredded
  • 2 tsp
    butter, melted

How To Make pear ginger muffins

  • 1
    Preheat oven to 350 degrees.

    Line muffin pans with papers.
  • 3
    Beat brown sugar, oil and egg until well blended.
  • 4
    Beat in buttermilk.
  • 5
    Add flour, baking soda, ginger and cinnamon and beat until blended.

    Fold in pears.

    Fill muffin cups two-thirds full.

    Topping: Combine brown sugar and ginger.

    Stir in butter until crumbly.

    Sprinkle Topping over muffins.

    Bake 18-20 minutes until toothpick comes out clean.

    Cool in pan 5 minutes before removing to wire rack.
