I just love these yummy muffins in the late summer....when the peaches are ripe and juicy....they also freeze well so you can enjoy them in the winter too....i hope you like these....we sure do.

Ingredients For peach streusel muffins

  • 2 stick
    margarine {melted}
  • 2 c
    whole milk
  • 4 lg
    eggs
  • 1 Tbsp
    vanilla or almond extract...{we use almond}
  • 2 c
    sugar
  • 6. c
    all purpose flour
  • 3 Tbsp
    baking powder
  • 1 tsp
    cinnamon, ground
  • 1 tsp
    salt
  • 5 c
    diced peaches {chopped small}
  • 2/3 c
    brown sugar
  • 2/3 c
    all purpose flour
  • 2/3 c
    finely chopped pecans
  • 4 Tbsp
    soft oleo
  • 1 tsp
    ground cinnamon

How To Make peach streusel muffins

    in large mixing bowl combine the melted margarine, eggs, sugar and extract. Blend well. Add flour, and milk alternately until completely blended. Add the baking powder, cinnamon, and salt. Fold in peaches last. Prepare muffin tins, with paper liners or cooking spray. Fill each section to about 1/2 full. Mix together: 2/3 c of brown sugar, 2/3c flour, chopped pecans,oleo and cinnamon, and sprinkle over each muffin. Bake for about 18 - to 20 mins...when the centers spring back. Cool in pans for about 5 mins, remove and cool completely on wire racks.. Yield about 3 dozen.
