Ingredients For peach muffins

  • 2 c
    self rising flour or 2 cups all-purpose flour, minus 2 tsp. flour, plus 1 1/2 tsp. baking powder and 1/2 tsp. salt
  • 1/4 tsp
    baking soda
  • 3 Tbsp
    sugar
  • 1
    egg, beaten
  • 2 Tbsp
    vegetable oil
  • 1 1/2 - 2 c
    milk, the batter should be slightly thicker then a cake batter
  • 2 c
    chopped ripe peaches
  • 1 tsp
    cinnamon
  • cinnamon sugar (optional)

How To Make peach muffins

  • 1
    Preheat oven to 425 degrees. Mix together the flour, baking soda, sugar, eggs, oil, and milk. Combine the peaches with the cinnamon and fold into the batter. Fill muffin cups three-quarters full and bake for 20-25 minutes. Sprinkle with cinnamon sugar, if desired. May substitute peaches with another fruit. If so, let me know how they turn out. Enjoy :o)
