Kids love to help make these muffins. I do not remember where I found this recipe but the grand kids love them.

Ingredients For pb & j muffins

  • 2 c
    flour
  • 1 1/2 tsp
    salt
  • 1 Tbsp
    baking powder
  • 2/3 c
    sugar
  • 1 c
    milk
  • 2 lg
    eggs
  • 1 c
    peanut butter, creamy
  • 1/4 c
    vegetable oil
  • 1/2 c
    jam/preserves of your choice
  • 1/4 c
    sugar for topping

How To Make pb & j muffins

    Heat oven to 375 deg, spray muffin pan with cooking spray. Stir dry ingredients together well (except the 1/4 cup sugar topping) in a large bowl. Combine milk, eggs, peanut butter, and oil in another bowl mixing well. Add to dry ingredients and with an electric mixer on low mix until all moistened, DO NOT OVER BEAT.

    Fill muffin cups with 1/2 of the batter. Place 2 level teaspoons jam in the center of each muffin. Evenly add remaining batter between muffin cups.

    Sprinkle with sugar topping, bake for 18-20 min. Remove from oven and let cool in pan 5 min.
