I love bed and breakfasts.. so cozy .. so home-y ... And always great breakfasts or warm offerings at the end of the day. This is a favorite from The Wedgwood Inn in New Hope, PA. Easy to make and easy to enjoy !!!

Ingredients For orange tea muffins

  • 1-1/2 c
    all-purpose flour
  • 1/2 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    butter, melted
  • 1/2 c
    fresh orange juice
  • 2
    eggs
  • grated rind of 1 orange
  • 1 c
    fresh or frozen raspberries (optional)
  • 1/2 c
    coconut (optional)

How To Make orange tea muffins

  • 1
    Combine flour, sugar, baking powder, and salt. Blend well.

    Melt butter. Remove from heat and stir in the orange juice, eggs, and orange rind. Beat

    Add the optional berries and/or coconut.
  • 4
    Stir the liquid into the dry mixture and blend until just moistened. Spoon into well-greased muffin cups.

    Bake 375 for 15-20 minutes.
