orange bran flax muffins

My MIL first introduced me to these moist, delicious....and Healthy muffins. This recipe was originated in connection with breast cancer prevention. sometimes, I tweak the ingredients a bit, as some I did not have on hand. These are great to bring to family gatherings or breakfast meetings. I usually make a double recipe and freeze some for later.

Ingredients For orange bran flax muffins

1 1/2 coat bran (or oats)

1 call purpose flour ( or wheat flour)

1 cflax seeds- ground

1 cwheat bran (or wheat germ)

1 Tbspbaking powder

2 1/2 tspsalt

1 1/2oranges-quartered and seeded

1 cbrown sugar
-
1 cbuttermilk
-
1/2 ccanola oil
-
2eggs
-
1 tspbaking soda

1 1/2 cgolden raisins ( or dried apricots)
How To Make orange bran flax muffins

1Preheat oven to 375. Line two 12-cup muffin pans with paper liners, or coat the pans with cooking spray. In a large bowl, combine oat bran, flour, flax seed, wheat bran, baking powder, and salt. set aside

2In a blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda. Blend well.

3Pour orange mixture into dry ingredients. Mix until well blended. Stir in raisins.

4Divide batter evenly among muffin cups. Bake for 18-20 min. Cool in pans 5 min. Before removing to a cooling rack
