These apple muffins will make your house smell absolutely scrumptious while baking. They are tender with bits of apple in each bite. The buttery brown sugar topping is a delicious touch. If you don't enjoy overly spiced baked goods, these are for you. There's just a hint of cinnamon. Enjoy this apple muffin any time of the year, but especially in the fall when apples are at their best.

Ingredients For okanagan apple muffins

  • TOPPING
  • 1/2 c
    brown sugar, firmly packed
  • 6 Tbsp
    all-purpose flour
  • 1/4 c
    butter, unsalted
  • 1 tsp
    cinnamon
  • MUFFIN
  • 1 1/2 c
    brown sugar, firmly packed
  • 2/3 c
    vegetable oil
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    water
  • 2 tsp
    apple cider vinegar
  • 2 1/2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    peeled apples, diced into 1/2 inch chunks

How To Make okanagan apple muffins

  • Prepare the muffin tins while the oven preheats.

    Preheat oven to 325 degrees F. Butter and flour or line 12-count two muffin tins with paper cups.
  • Combine brown sugar, flour, butter, and cinnamon for the topping.

    Make the topping. Combine the brown sugar, all-purpose flour, butter, and cinnamon in a bowl. Mix with fingers until crumbly. Set aside.
  • Mix oil, egg, brown sugar, and vanilla for the muffins.

    For the muffins, beat the 1 1/2 cups brown sugar, oil, egg, and vanilla in a large bowl.
  • Combine apple cider vinegar and water.

    Combine the water and apple cider vinegar.
  • Sift flour, baking soda, and salt.

  • Blend alternating flour.
