When I worked I would make these for many morning meetings. I think they really start out your day right. Warm and add some butter. So good!

Ingredients For morning glory muffins

2eggs

2 tspvanilla extract

1/4 cmilk

3/4 cvegetable oil

1 cflour
-
1 cwheat flour

2 tspbaking soda

2 tspcinnamon

1/2 tspsalt

1 cbrown sugar

1 cshredded apple
-
1 1/2 cshredded carrots
-
1/2 cshredded coconut, sweetened or unsweetened

1/2 craisins
-
1/2 cchopped almonds
How To Make morning glory muffins

1Wisk eggs, vanilla, milk, and veggie oil together in a big bowl.

2Add flours, baking soda, cinnamon, salt, and brown sugar – then mix until all ingredients are moist.

3Add remaining ingredients and mix well.

4Either grease muffin pan or put muffin cups in. Divide into muffin pan, each muffin about ¾ full. Makes 18 muffins.

5Preheat to 350 degrees, put muffins in. Reduce heat to 325 bake for 25 minutes (until toothpick comes out clean). Let cool for 5 minutes in pan, then transfer to cooling rack.
