morning glory muffins

When I worked I would make these for many morning meetings. I think they really start out your day right. Warm and add some butter. So good!

Ingredients For morning glory muffins

  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 1/4 c
    milk
  • 3/4 c
    vegetable oil
  • 1 c
    flour
  • 1 c
    wheat flour
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1 c
    brown sugar
  • 1 c
    shredded apple
  • 1 1/2 c
    shredded carrots
  • 1/2 c
    shredded coconut, sweetened or unsweetened
  • 1/2 c
    raisins
  • 1/2 c
    chopped almonds

How To Make morning glory muffins

    Wisk eggs, vanilla, milk, and veggie oil together in a big bowl.

    Add flours, baking soda, cinnamon, salt, and brown sugar – then mix until all ingredients are moist.

    Add remaining ingredients and mix well.
  • 4
    Either grease muffin pan or put muffin cups in. Divide into muffin pan, each muffin about ¾ full. Makes 18 muffins.

    Preheat to 350 degrees, put muffins in. Reduce heat to 325 bake for 25 minutes (until toothpick comes out clean). Let cool for 5 minutes in pan, then transfer to cooling rack.
