mixed berry muffins

Found this recipe in a magazine. Baked them to take to my neighbor but she didn't get any of this first batch. My husband, me, and grandkids had them gone in 2 days. I am making another batch for the neighbor. They are so easy to make. They are delicious. Moist and not too sweet.

Ingredients For mixed berry muffins

  • 2 1/4 c
    self rising flour
  • 3/4 c
    brown sugar, light
  • 1 c
    butter, melted
  • 1 pkg
    pound cake mix (16oz.)
  • 2
    eggs
  • 1/2 c
    buttermilk
  • 1 tsp
    each grated lemon zest & orange zest
  • 1 1/2 c
    mixed berries, fresh or frozen ( i used fresh)

How To Make mixed berry muffins

    Preheat oven to 350 degrees. Line 18 muffin cups with cupcake liners. Combine flour, sugar, and 3/4 cup of the butter until crumbs form. Set aside.

    On high speed beat cake mix, eggs, buttermilk, zests, and remaining 1/4 cup butter. Beat 2-3 minutes. Until light & fluffy. Stir in berries.

    Divide batter among liners. Sprinkle the reserved crumb mixture over top of batter. Bake 30-35 minutes.
