I like to serve these at breakfast with some fresh fruit, scrambled eggs and either bacon or sausage.

Ingredients For meal in a muffin

  • DRY INGREDIENTS:
  • 3/4 c
    whole wheat flour
  • 1/2 c
    oats, uncooked
  • 3 Tbsp
    wheat germ
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 3/4 tsp
    cinnamon
  • 1/8 tsp
    nutmeg
  • 1/4 tsp
    salt
  • 3/4 c
    granulated sugar
  • WET INGREDIENTS:
  • 1/2 c
    oil (corn, vegetable or canola)
  • 2 lg
    eggs
  • 1 md
    carrot, grated
  • 1 lg
    apple, peeled and grated
  • 2 tsp
    vanilla
  • 1/2 c
    shredded coconut
  • 1/3-1/2 c
    raisins
  • 1/3 c
    chopped nuts (i use walnuts)

How To Make meal in a muffin

    In a large bowl, mix dry ingredients. In a seperate bowl mix remaining ingredients.

    Mix wet and dry together, a little at a time until well moisened.

    Spoon equal amounts in 12 greased or papered muffin tins. Bake at 375 degrees until done, about 20 minutes. Do not overbake.

    At higher altitudes decrease temp to 350 and bake 25-30 min.
