These are so so so easy and good! They taste kind of like a sausage McGriddle from McDonald's. These will seriously disappear almost instantly from any potluck. I am obsessed with pancakes so I wanted to eat all 36 of these myself but didn't think that was such a good idea. I love the simplicity of this recipe. So easy to make and yet so good! Great for breakfast, brunch, a late-night snack, or anywhere in between!

Ingredients For maple-glazed sausage pancake muffins

  • 1 box
    pancake mix, 32 ounce
  • 2
    eggs
  • 1 stick
    butter
  • 2 c
    maple syrup
  • 2 c
    milk
  • 1 pkg
    brown and serve sausage links
  • MAPLE SYRUP GLAZE
  • 1 stick
    butter
  • 1 c
    maple syrup

How To Make maple-glazed sausage pancake muffins

    Melt butter in microwave safe bowl. Stir in 1 cup maple syrup until blended. Beat in the eggs until blended. Add the pancake mix and slowly stir in the milk. Once mixture is well blended, slowly stir in the additional cup of maple syrup until blended.

    Line 3 muffin pans with cupcake cups (or grease well if not using cups). Scoop 1/4 cup mixture into each muffin cup. Cut up sausage links into 36 pieces and drop 1 piece of sausage into each muffin cup, pressing to coat with batter. Bake at 350 for 10-15 minutes or until lightly browned on top.

    For glaze, melt 1 stick of butter in microwave safe bowl. Whisk in 1 cup maple syrup until well blended.

    Allow muffins to cool for a few minutes. Using a fork, gently poke several holes in the top of the muffins. Dip each muffin top in the maple syrup glaze and twist to coat.

    Let glaze set for several minutes up to overnight before enjoying muffins.
