Fresh zing of lime is a wonderful surprise when paired with poppy seeds. Delightful for breakfast or afternoon tea.

1 3/4 cflour

3/4 csugar

zest of one lime

1 Tbspflax seeds, freshly ground (optional)

1 tspbaking powder

3/4 tspbaking soda

1/4 tspsalt

6 ozlime yogurt

6 Tbspbutter, melted and cooled

1 lgegg

2 Tbsplime juice

2 Tbsppoppy seeds
- (OPTIONAL) SUGAR TOPPING

1/4 csugar

1 1/2 tsplime zest
How To Make lime poppy seed bread / muffins

1Preheat oven to 400° F. Prepare pan (loaf, mini loaf, or muffin) with nonstick spray.

2In a small bowl, combine sugar and lime zest. (Sanding sugar works great for this, but granulated may be used.) Stir well and set aside.

3In a large bowl, whisk together flour, sugar, lime zest, flaxseed, baking powder, baking soda, and salt. Set aside.

4In a separate bowl, whisk together yogurt; cooled, melted butter; egg; lime juice; and poppy seeds. Fold into dry ingredients; stir just until combined. Do not over mix. Batter will be thick.

5Spread into prepared pan(s). Dip a rubber spatula in water and smooth out the top of batter. Sprinkle with prepared lime-zest sugar. ALTERNATIVE: Sprinkle with sweetened shredded coconut . Press into batter.

6Bake in preheated oven for 20-35 minutes (depends on size/type of pan) or until top is golden and toothpick comes out clean. Remove from pan and cool completely.
