These are one of my daughter's favorite muffins, not only to make but eat as a little girl. Now that she is grown and has a family of her own, she loves to make these muffins.

We love that lemonade concentrate is used because it is sweet and gives this fantastic muffin great lemon flavor. Brushing the tops with lemonade just adds to the flavor and sweetness.

Ingredients For lemonade muffins

1 1/2 call-purpose flour

1/4 csugar
-
2-1/2 tspbaking powder
-
1/2 tspsalt
-
1egg, beaten
-
1 canfrozen lemonade concentrate, thawed (6 oz)

1/4 cmilk
-
1/3 cvegetable oil
-
1/2 cwalnuts, finely chopped (optional)
How To Make lemonade muffins

1Preheat oven to 375. Mix dry ingredients.

2In another bowl, mix 1/2 cup lemonade, egg, milk, and oil.

3Add the dry ingredients.

4Mix well and stir in optional nuts.

5Prepare muffin pan with vegetable spray or cupcake liners. Fill with batter about 2/3 full. Bake for 15-20 minutes.

6While hot, brush with remaining lemonade.

7Sprinkle with granulated or powdered sugar.
