kathy's oatmeal muffins

This recipe is the easiest and quickest to make. As my kids grew they would wake to the smell of sweet, hot muffins. Mix and bake in less than 20 minutes and you look like a star. I now serve it in my retirement homes I run and the residents enjoy them a lot.

Ingredients For kathy's oatmeal muffins

  • 1 c
    rolled oats
  • 1 c
    buttermilk (add 1 teaspoon vinegar to milk)
  • 1 c
    flour
  • 1 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 c
    oil
  • 1/2 c
    brown sugar (packed)
  • 1
    egg - well beaten

How To Make kathy's oatmeal muffins

    Combine oats and buttermilk and let stand.

    Combine all dry ingredients.

    Add, oil, sugar and eggs to the oats and milk mixture.

    Blend in dry ingredients only to moisten. Spoon into muffin cups and bake in a 350 degree oven for approximately 15 minutes. (depending on your oven)
