I wanted to make some Jumbo Muffins for a Bake Sale, I found this recipe in Taste of Home. Muffins came out large and moist.

2 1/2 call purpose flour

1/2 csugar

1/4 cbrown sugar, firmly packed

2 tsppumpkin pie spices

1 tspbaking powder

1 tspbaking soda

1/2 tspsalt

2eggs
-
1 (15oz) canpumpkin

1/2 cbuttermilk

1/4 cvegatable oil

1 tspvanilla extract

1/2 cchopped pecans
- TOPPING

1/3 cbrown sugar, firmly packed

1/3 cfinely chopped pecans

1/4 call purpose flour

1/4 ccold butter
How To Make jumbo pumpkin pecan muffins

1In a Large bowl, combine the first seven ingredients. In another bowl, combine the eggs, pumpkin, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in pecans. Fill six greased or paper-lined jumbo muffin cups.

2In a small bowl, combine the brown sugar, pecans and flour; cut in butter until crumbly. sprinkle over batter.

3Bake at 375 for 25 - 30 minutes or until toothpick comes out clean. Let cool for 5 minutes then remove from pan.
