jazzed-up jiffy muffins

My husband just loves Jiffy corn muffins, and requested them for supper again tonight. However, my tastebuds were getting a little bored, so I changed things up a bit with another one of my little experiments. To the regular ingredients, I added bacon, cheddar, parm, some fresh chives from our garden and a little cajun spice. Wow! Am I glad I did! These muffins were absolutely delicious, and so easy too! I'm not too sure that we'll ever eat plain corn muffins again. Yes, they're that good! (Note: Recipe may be doubled.)

Ingredients For jazzed-up jiffy muffins

1 lgegg

1/3 cwhole or 2% milk

1/8 tsplouisiana cajun seasoning

1 boxjiffy corn muffin mix
-
1 1/2 Tbspfresh chives
-
2 Tbspreal smoked bacon bits
-
1/3 cshredded sharp cheddar cheese

1/3 cshredded parmesan cheese
-
softened butter for serving
How To Make jazzed-up jiffy muffins

1Gather and prep ingredients. Preheat oven to 400 degrees F. Prepare muffin tin by spraying with cooking spray (recipe makes 6 muffins.)

2In a medium bowl, stir/whisk together egg, milk and Louisiana Cajun Seasoning until well combined.

3Add cornmeal mix; stir just until most larger lumps disappear. Let batter rest for 3 or 4 minutes.

4Add chives, bacon bits and both cheese; stir until just combined.

5Spoon batter into prepared muffin tin, filling each about 3/4 to almost full.

6Bake on center rack at 400 degrees F for 15 to 16 minutes.

7Remove from oven. Immediately, loosen muffins from pan by using a butter knife around the outside of each. Serve muffins, hot or warm, with softened butter.
