My husband just loves Jiffy corn muffins, and requested them for supper again tonight. However, my tastebuds were getting a little bored, so I changed things up a bit with another one of my little experiments. To the regular ingredients, I added bacon, cheddar, parm, some fresh chives from our garden and a little cajun spice. Wow! Am I glad I did! These muffins were absolutely delicious, and so easy too! I'm not too sure that we'll ever eat plain corn muffins again. Yes, they're that good! (Note: Recipe may be doubled.)

  • 1 lg
    egg
  • 1/3 c
    whole or 2% milk
  • 1/8 tsp
    louisiana cajun seasoning
  • 1 box
    jiffy corn muffin mix
  • 1 1/2 Tbsp
    fresh chives
  • 2 Tbsp
    real smoked bacon bits
  • 1/3 c
    shredded sharp cheddar cheese
  • 1/3 c
    shredded parmesan cheese
  • softened butter for serving

How To Make jazzed-up jiffy muffins

  • Ingredients for Jazzed-Up Jiffy muffins.

    Gather and prep ingredients. Preheat oven to 400 degrees F. Prepare muffin tin by spraying with cooking spray (recipe makes 6 muffins.)

    In a medium bowl, stir/whisk together egg, milk and Louisiana Cajun Seasoning until well combined.

    Add cornmeal mix; stir just until most larger lumps disappear. Let batter rest for 3 or 4 minutes.

    Add chives, bacon bits and both cheese; stir until just combined.

    Spoon batter into prepared muffin tin, filling each about 3/4 to almost full.

    Bake on center rack at 400 degrees F for 15 to 16 minutes.
  • Warm, buttered corn muffin.

    Remove from oven. Immediately, loosen muffins from pan by using a butter knife around the outside of each. Serve muffins, hot or warm, with softened butter.
