Ingredients For jam filled muffins

  • 1-3/4 c
    flour
  • 1/2 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 2
    eggs
  • 2/3 c
    milk
  • 1/3 c
    butter or margarine..melted
  • 1 tsp
    grated lemon peel
  • 1/2 c
    raspberry or strawberry jam

How To Make jam filled muffins

  • 1
    In a large bowl combine the 1st 4 ingredients. In a small bowl lightly beat eggs;add milk,butter &lemon peel....Pour into dry ingredients & stir just until moistened....Spoon 1/2 of batter into 12 greased muffin cups....Make a well in the center of each.Add jam....Spoon remaining batter over jam. Bake 400 degrees...20-25 min. or until golden brown.
