Ingredients For hula muffins

  • 2/3 c
    sugar
  • 1/3 c
    oil
  • 2
    eggs
  • 1 c
    carrot, shredded
  • 3/4 c
    canned pineapple drained
  • 1 1/2 c
    flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    nutmeg

How To Make hula muffins

  • 1
    Heat oven to 425. Put a paper baking cup in each of 12 regular size muffin cups, or grease just the bottoms of 12 muffin cups.

    Stir sugar, oil, eggs, carrots and pineapple in medium bowl until mixed. Stir in rest if ingredients. Spoon batter into muffin cups.

    Bake 13 to 17 minutes or until light golden brown or toothpick poked in center comes out clean. Cool 5 minutes. Loosen sides of muffins from pan if needed, and take them out of the pan. Makes 12 muffins.
