These cornbread muffins are so tasty you'll find reasons to make them. They're a fantastic addition to brunch but just as tasty with a bowl of chili. We love the sweetness the honey adds to the cornbread.

Ingredients For honey cornbread muffins

  • 1 c
    yellow cornmeal
  • 1 c
    all-purpose flour
  • 1 Tbsp
    baking powder
  • 1/2 c
    sugar
  • 1 tsp
    salt
  • 1 c
    milk
  • 2
    eggs
  • 1/4 c
    butter, melted
  • 1/4 c
    honey

How To Make honey cornbread muffins

  • Cupcake liners with paper liners.

    Preheat the oven to 400 degrees F. Line a 12 cup muffin tin with paper liners.
  • Dry ingredients whisked together.

    In a large bowl, mix the first five ingredients.
  • Milk, eggs, melted butter, and honey whisked together in a separate bowl.

    In another bowl, mix the milk, eggs, melted butter, and honey until well incorporated.
  • Wet and dry ingredients incorporated.

    Add the wet ingredients to the dry and stir together until just mixed.
  • Batter poured into muffin tins.

    Evenly divide the batter into the 12 muffin cups (I use a round ice cream scoop).
  • Cornbread muffins baking in the oven.

    Bake for 12-15 minutes until golden.
