healthy snak'n muffins

I have parents and friends that are diabetics...and am always reminded to try to create diabetic friendly recipes...I came by this recipe the other day, via The Pioneer Woman. This muffin is really good!!! It has wonderful flavors! If I did the calculations right, there is less than 1/2 gram of fat in each muffin and a little over 1 tsp. of brown sugar per muffin. AND you could opt to use Splenda Brown Sugar too. Adapted from the Pioneer Woman

Ingredients For healthy snak'n muffins

  • 1 c
    whole wheat flour
  • 1/2 c
    ap flour
  • 1/4 c
    fresh ground flaxseed
  • 1 c
    oatmeal
  • 1/2 c
    brown sugar
  • 1/2 tsp
    sea salt
  • 1 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 3/4 c
    pecans, in pieces
  • 3/4 c
    *craisins
  • 1 1/4 c
    buttermilk
  • 1 lg
    egg
  • 1/2 c
    natural applesauce
  • 1
    banana, mashed
  • 1/4 c
    molasses
  • 1 Tbsp
    lemon juice, optional

How To Make healthy snak'n muffins

    Preheat oven to 350. Line muffin pans with 18 liners or spray well. In a large bowl mix together first 11 ingredients, wheat flour thru craisins. In a small bowl whisk together the remaining 5 ingredients, buttermilk thru lemon juice. Add wet ingredients to dry and stir to mix. Fill liners 3/4 full and bake 17-20 minutes. Remove from oven to cooling racks. Enjoy!

    *craisins...you can use raisins, dried cherries or blueberries, chopped dried apricots...etc *you could also add white chocolate or dark chocolate chips if you like.
