With all these birthday parties happening in our home, I felt the need to make a GF dessert for my daughter since she is unable to eat the Birthday cakes I made for the celebratory occasions! So I took my grandmother's Banana bread recipe and made a few changes to make this delicious treat for my beautiful daughter. Turns out the WHOLE Family Loves them! This will make making banana bread and muffins a bit less tasking for me. I can keep it GF for everyone! :) We hope you enjoy this delicious treat/dessert! A nice variation to the Banana-Nut Cake I made for my Husband's Birthday yesterday

Ingredients For gluten-free banana walnut muffins

  • 1 c
    all purpose gluten free flour
  • 1 c
    coconut flour, gluten free
  • 1 c
    sugar (or 3/4 cup agave nectar)
  • 1 tsp
    sea salt
  • 1 tsp
    gf baking soda
  • 1 tsp
    gf baking powder
  • 1 1/2 tsp
    xanthan gum
  • 1/2 c
    crisco
  • 2 lg
    eggs
  • 2-3 lg
    ripe bananas, mashed
  • 1 tsp
    vanilla extract
  • 1 c
    walnuts, chopped (optional)
  • CREAM CHEESE ICING
  • 1- 8 oz
    package cream cheese at room temp
  • 1 tsp
    vanilla extract
  • 1/2 c
    butter, softened
  • 1 lb
    powdered sugar

How To Make gluten-free banana walnut muffins

    Preheat oven to 350 degrees F. Prepare cupcake pans by lining with cupcake liners.

    In a large bowl add flours, sugar, salt, xanthan gum, baking soda, & baking powder. Sift until mixed together well. (If using agave nectar, add to next step)

    Add crisco, mashed bananas, eggs, and vanilla extract, mix on low-medium speed for 2-3 minutes. Fold in chopped walnuts. (add agave here if using)

    Spoon mixture in cupcake liners about 3/4 full. Bake @ 350 degrees F for 25-35 minutes (depending on how full you fill your liners), or until a cake tester inserted in the middle comes out clean. Allow to cool completely before icing

    Prepare Icing: In a medium bowl, add cream cheese, & butter. Add vanilla extract, & powdered sugar, cream everything together until well blended. Ice cooled muffins. Eat, Enjoy!
